Mascarpone finds its origins in the northern part of Italy, in particular in the province of Lodi, Como and Lecco. Today Mascarpone is a well-known product all over the world and is appreciated because of its versatility. To have this successful product and to meet the demand requests, some modifications to the production process have been necessary. First, the milk cream must be heat treated at 121°C for few seconds and only after this process coagulants are introduced.
Mascarpone distinguishes for its homogeneous and thick consistency, well blended and with a typical sweet flavour. This product can be used to prepare many sweet dishes and is famous all over the world because it is the main ingredient of what is the most consumed dessert, Tiramisù.
