Stracchino has a mild and slightly acid flavour; its consistency is soft, spreadable and melting in the mouth. It can be tasted by itself with some toasted bread or it can also be used to enrich many recipes. It is a soft and short-aged cheese produced with whole cow’s milk. It looks like a fat and soft cheese, with a thin and tender rind with a white colour.
A curiosity about its name: it comes from the Lombard term “strac” which means tired as it was produced with tiredcows from the transhumance at the bottom of the valley after summer pasture.
