Taleggio DOP is a very ancient cheese, its origins are back to the 10th century and the product name finds its origins in the Italian valley that has the same name “Val Taleggio”, in the Bergamo Alps. The first written sources about this cheese extend back to the 13th century, when it was invented to use the milk that exceed from direct consumption. It has been appreciated since its birth and its popularity spread all over the Lombardy region. The name “Taleggio” dates back to the 20th century when the farmers in Val Taleggio decided to give this special name to distinguish their production from the other cheese of the area.
This product gained the PDO denomination back in 1996, and since then it can only be produced in the province of Bergamo, Brescia, Como, Cremona, Lecco, Lodi, Milan, Pavia, Novara and Treviso.
